     These delicious and adorable football cookies have become a game day tradition in our house.  I came up with the idea a few years ago when I wanted to make something festive, cute and quick for a Superbowl party and they were a hit!     So, I found out a little over a month ago that I had Celiac Disease (which means no bread/gluten). I haven’t felt like it’s been that hard, partly because my Dad has Celiac disease so I already have lots of meal ideas and I’m already pretty educated about what does and doesn’t contain gluten.  Pre-cooking our meals for the week has been really helpful because most gluten free meals take more time to cook (like rice or potatoes).     So, a couple of months ago, Scott and I discovered apple pie caramel apples at Rocky Mountain Chocolate Factory and we fell in love.     I remember the first time I saw a Cauliflower Pizza Crust recipe on Pinterest . I honestly thought, “that sounds gross”. Since then, I’ve really opened up to trying more healthy options when it comes to food (even if they sound weird).
