When it’s chilly we make chili

We’ve had lots of snow here in Provo the last few days. Unlike many, Scott and I love it. We’d be happy with two more feet!

Snow is inherently connected to warm food. Hot Chocolate, breads, soups or in our case… chili.

I am impressing myself with my newly found cooking skills. Marriage does things to you I guess. I looked at a few different chili recipes to get the idea and then I came up with this recipe here all on my own!! It was surprisingly yummy and healthy. So I thought I’d share

When it’s Chilly Chili : by Elise Hunter

  • 1 yellow onion, diced
  • 3 cloves garlic minced
  • 1.25 lbs ground turkey
  • 1 can diced tomatoes
  • 1 little can diced green chilies (New Mexican Influence)
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1 teaspoon dried oregano
  • 1/2 teaspoon ground cayenne pepper
  • 1/2 teaspoon ground black pepper
  • 1 teaspoon ground cinnamon
  • 1/2 tablespoon dark brown sugar
  • 1 can black beans (drained)
  • 1 can whole kernel corn (drained)
  • 1 can kidney beans
  • 1 can low sodium chicken broth
  • 1 tsp tapatio (any hot sauce would work)
  1. brown the ground turkey with the onions and the garlic in the bottom of your pot
  2. add in tomatoes, green chilies, spices and sugar. simmer for 5 minutes
  3. add in black beans, broth and corn.
  4. in a food processor or blender puree the kidney beans (looks like gross pink paste but it thickens up the chili)
  5. add in pureed kidney beans and taptio
  6. simmer for 10 min (or as long as you like)

We served our chili over baked potatoes. Inspired by our favorite fast food meal- Wendy’s baked potato and chili. But this was better…and cheaper.

ENJOY! and stay warm

P.S. Miracles still happen. We’ve been dreading getting Scott’s ER bill in the mail. It came, I opened it, and instead of a bill we got a refund check. It was awesome!
